Apple pie spice is another one of those pre-mixed spices that you can buy in the supermarket, or make yourself at home with spices you already have. To make apple pie spice, combine in a small bowl:

1/4 cup ground cinnamon
2 tsp ground nutmeg
2 tsp ground ginger
1 tbsp ground allspice

Store the spice mixture in a tightly sealed container.

Apple pie spice can be used to flavor more than just apple pie – try it on some sautéed apple slices (mix 1-2 chopped, peeled and cored apples with 1 tsp. spice and 1-2 T sugar and simmer for about 5 minutes), your morning oatmeal, in apple cider, or even in your morning cup of coffee for a decidedly fall flavor.

When you’re pressed for time, a rotisserie chicken from the local supermarket can be a lifesaver – or at least a dinner saver. They generally cost about $6 (although you can sometimes find them on special), but more than make up for the price in flavor and convenience.

We recently purchased a rotisserie chicken on a routine shopping trip, and found several ways to use it:

~ Shred it with a fork to make barbecued chicken sandwiches (mix with barbecue sauce, or add sauce to bread) or place on top of salad.
~ Cube it and mix in with pasta salad.
~ Eat as part of a baked-chicken dinner, with roasted vegetables and bread.
~ Toss it into a casserole.
