Looking for an award-winning, inexpensive meal to make for dinner tonight? The votes are in, and the Whole Foods Market Budget Recipe Challenge results have been announced. Karina Allrich of Karina’s Kitchen has won first prize for her Sweet Potato and Black Bean Enchiladas recipe, which serves four at approximately $2.59 per serving.

Karina Allrich is a creative cook who enjoys developing easy rustic recipes featuring seasonal ingredients and Mediterranean-inspired flavors. Her illustrated blog features gluten-free family recipes as well as casein-free, vegetarian and vegan recipes.

You don’t have to get on an airplane to enjoy honey-roasted peanuts – in fact, many airlines aren’t even serving peanuts (or any snacks, for that matter) on their flights. If you’re craving the salty sweet goodness of honey-roasted peanuts, or just want a quick snack, here’s an easy way to make them at home.

You’ll need:

16 ounces unsalted or lightly salted peanuts, roasted
1/3 cup honey
1/2 cup sugar
2 tablespoons coarse kosher salt

To make:

Preheat oven to 350°F. Line a baking sheet with parchment paper and coat well with nonstick cooking spray. Spread peanuts on the paper.

Pour honey into a glass measuring cup and melt on 50% power in the microwave until it liquefies – about 30 seconds.  Drizzle honey over the peanuts.

Bake for about 15 minutes, stirring in 5-minute intervals and keeping an eye on the peanuts so they don’t darken too quickly. When they are just beginning to turn golden brown, remove from the oven and stir. Sprinkle salt and sugar over them, stir again, let cool, and serve.
